Wash limes with care with hot water, peel zest and chop finely, then wring out juice. Spread sesame seeds evenly on a flat plate.

Cut avocados in half, remove seeds, lift flesh from skins with a spoon, mash with a fork, mix on the spot with lime juice, then spread through a sieve. Mix avocado with sour cream and zest (except for a small remainder). Season with salt, pepper and wasabi and stir through with most of the chopped chili. Sprinkle remaining zest and remaining chili on top.

Press tuna pieces firmly into sesame seeds on all sides to form a crust. Heat oil vigorously and fry fish on both sides for about a minute each, inside should still be raw. Serve with the avocado wasabi.
