Instructions:

For the Waldviertel dumplings, first prepare the curd cheese semolina dough. To do this, mix all ingredients into a smooth dough, cover and let rest in the refrigerator for ½ hour.

For the filling, lightly sauté onion and vegetables in vegetable oil. Mix with remaining ingredients and season. Form small balls and let set in the refrigerator.

Form a roll from the dough and cut off equal-sized slices, flatten slightly, cover with filling and form into dumplings.

Steep the Waldviertler dumplings in boiling salted water for 10-15 minutes.
