Cook the potatoes in the pressure cooker for 10-15 minutes, depending on their size. Meanwhile, cut the onions into thin rings and fry in olive oil until light brown.
Mix cream cheese with soy milk, chopped garlic and spices and season to taste. Preheat the oven to 200 °C top and bottom heat.
Brush a baking dish with olive oil. Peel the potatoes and cut into slices. Alternate layers of potato slices, cream cheese sauce and roasted onions in the baking dish.
Finally, sprinkle with the grated cheese, bake for about 45 minutes and serve with a fresh salad.
