Instructions:

Melt the smoked bacon in a saucepan and fry the onion cubes in the rendered fat.

Add the meat and ham, brown a little and deglaze with beer.

Add the remaining spices, season with pepper and salt and simmer gently with the lid closed for about 90-120 minutes.

Season with brandy, sugar and vinegar, add pepper and salt to taste, thicken with sauce thickener as desired, let simmer for another 10 minutes and serve with pasta.
