Clean the celery, rinse, drain. Cut the leaves into small pieces and perhaps freeze them for soups…. Bring juice of one lemon and water to a boil. Pre-cook celery in it for 3 to 5 minutes, drain. Cut into pieces as evenly as possible for each glass height and place in glasses. Make salted water with the washed lemon peel for 5 min. with the lid closed. Take out the lemon peel. Pour water over celery. Close jars and cook at 98 degrees for 60 min.
