cut out, core, scrape out the pulp and arrange on a flat plate.

Mix the melon pulp with chopped watercress, white wine, green Tabasco, salt and pepper, add lemon zest, mix in half of the shrimp, mash and fill into the melon bowl.

Garnish the soup with some cress leaves and shrimps.
