Instructions:

For the lacquered roast pork on pointed cabbage, first season the pork loin with salt, pepper and marjoram, roast in hot oil on both sides for 2 minutes each. Then add onions, whole garlic cloves and rosemary.

Turn the meat on the meat side and roast in the oven for 20 minutes at 180 °C (top/bottom heat). Mix honey and soy sauce and brush the pork rind with it 5-6 times during roasting.

Then remove the meat and place it on a plate to keep warm. Deglaze the roast with a little clear soup and bring to the boil, strain and thicken with 20 g butter.

Cut the pointed cabbage in half, remove the stem and cut the cabbage halves into tender strips. Sauté the shallot in butter, add the pointed cabbage strips and fill up with whipped cream. Season with pepper, sugar, salt and juice of one lemon and simmer on low heat for 8 minutes. Season with freshly grated nutmeg.

Slice the pork loin and arrange on top of the pointed cabbage. Serve the finished lacquered roast pork on pointed cabbage immediately.
