For the pork lung roast wrapped in bacon, place the bacon strips on baking paper or a cutting board, slightly overlapping.
Lightly salt the lung roast all around and brush with bresso. Season with plenty of freshly ground pepper. Wrap the lung roast with the bacon strips and brown all over in a skillet.
Wrap in aluminum foil and finish cooking at 175C° hot air for about 30 minutes. Serve the pork lung roast wrapped in bacon.
