Remove the stem from the sarca heads and detach individual leaves. Remove very coarse leaf veins, lightly pound the leaves. For the filling, dice the onion, mushrooms and garlic and sauté in olive oil. Mix with the minced meat. To this quantity also add the soaked and well squeezed mustard, bread roll, eggs, tomato ketchup, chopped rosemary, lemon peel. Mix everything well, season with salt and freshly ground pepper.
Shape the minced meat into small loaves and place each loaf on a cabbage leaf. Form into small parcels. Cut tomatoes into thicker slices. Fry the cabbage loafs in a pan with the tomatoes and place in the oven preheated to 180 °C for 10 minutes.
Sauté the cooked tender wheat in a frying pan with a little butter, add the parsley and diced tomatoes, season with salt and pepper. Arrange the cabbage loaves on the tender wheat, place tomato slices on top and garnish with smooth sour cream.
