A great cake recipe for any occasion:
Mix flour, sugar and salt in a baking bowl. Add butter in flakes. Rub together with your fingers until crumbly.
Mix egg yolks and water, add and quickly prepare the whole thing into a smooth dough. Leave to cool for 30 minutes.
Dip the peaches briefly in boiling water and remove the skin. Cut in half and remove the stone. Place an almond in each peach half.
Spread the butter on the bottom of a non-stick baking dish (28 cm ø). Sprinkle with sugar. Put the pan on a hotplate and heat until the sugar starts to caramelize. Immediately remove from the heat.
Place the peaches in the mold with the cut side down.
Crumble the amaretti and sprinkle over the top. Roll out the dough on the lightly floured surface (circle of about 30 cm) Place over the peaches and push the edge down into the mold.
Bake the cake in the heated oven for about half an hour (180 °C ). Remove and turn out on the spot onto a cake plate. If you wait just a moment, the peaches will stick to the bottom of the pan, because the caramel will solidify on the spot.
