Cut the fillet about 5mm thick slices and then into narrow strips. Heat the oil in a wok. Pour in the meat and stir-fry for 3-4 minutes at high temperature. Now remove the meat and set aside for now.

Pour in minced garlic and peppers cut into thin strips. Roast at high temperature, stirring, until pecoroni is tender. Pour in peppercorns, pepperoni paste and bean sprouts. Stir-fry for 2-3 minutes.

Add meat together with the rice wine, water and a tiny bit of salt repeatedly to the wok form. Cook until the meat is repeatedly hot.

To roast the sezuan pepper grains, heat the wok without oil. Pour in about 2 tbsp. grains and brown over high heat, stirring meanwhile, until they darken and begin to smoke. Cool completely before further use.
