For the apple pie on a stick, first mix flour with salt and sugar in a mixer, add cold butter in small pieces and mix until crumbly.
Add 3 tablespoons of water and knead into a dough. Wrap in plastic wrap and chill for 30 minutes.
Peel, wash and grate the apple. Boil apple juice with cinnamon stick (to taste). Then remove the cinnamon stick and cook the pudding together with the apple juice according to package directions.
Pour the finished apple pudding over the grated apples and mix.
Preheat the oven to 180 °C convection oven. Roll out the dough on a floured surface and cut out 26 circles. You can cut out additional dough decoratively from half of the circles using the small cookie cutters.
Place a wooden stick and 1 teaspoon of apple mixture on each of the second half of the dough circles.
Then brush the edge with cold water and cover with a second circle of dough cut out decoratively. Press the edge together with a fork.
Mix the egg yolk with a little milk and brush the top circle of dough with it.
Bake the apple pie on a stick for 15-20 minutes. Let cool well before serving.
