Instructions:

Place potatoes on a work surface. Pierce each potato lengthwise at the very bottom with a skewer. Using a knife, make a thin cut from the top to the skewer. The potatoes should now fan out easily.

Rub the potatoes with olive oil and salt, roast on the grill (or in the oven) for about 30 minutes until soft.

Insert cheese and a few slices of garlic into the fan openings.

Grill (or bake) for another 5 minutes, until cheese is melted.

Serve the Quattro Formaggi Peas immediately after.
