Instructions:

Leave the fish whole or fillet it, depending on your preference. Salt, roll in flour and fry in clarified butter or oil. Remove and let cool. Cut onions into rings. Boil water with vinegar, salt, sugar, bay leaves, juniper berries and peppercorns once briefly. Add onion rings and let steep for a few minutes. Pour the cold broth over the fish so that they are covered. Leave to marinate in the refrigerator for 2-3 days.When serving, garnish with the onion slices.

Recommended side dishes: crusty white bread, fried potatoes.
