For the fruit bread, first dissolve the yeast with 1/2 tsp sugar in the milk.
Finely dice the dried fruit and candied orange peel. Coarsely chop walnuts.
Knead the yeast mixture, butter, flour, sugar, salt, gingerbread spice and orange zest thoroughly (a mixer with a dough hook is best).
Add dried fruit, candied orange peel and nuts.
Cover with a clean tea towel and let rise in a warm place for about 30 minutes.
Cover a baking tray with baking paper.
Shape the dough into a loaf, place on the tray, cover and let rise for another 30 minutes.
In the meantime, preheat the oven to 180 °C.
Whisk the yolks and milk. Brush the fruit loaf with it.
Bake the fruit loaf on the 2nd rack from the bottom for about 75 minutes.
