For the potato in honey crust, first line a baking tray with aluminum foil and brush it with olive oil.
Then peel the potato and cut in half lengthwise and spread on the tray with the cut surface facing up.
Now peel the onion, chop finely and sauté in a pan with oil until translucent. Add pressed garlic together with honey and tomato paste and mix everything well. Season with salt, pepper, nutmeg and oregano.
In the next step, evenly coat the potatoes with the warm paste and bake at 220 °C on the middle rack for about 40 minutes until crispy.
