For the vegetarian version of a chili con tofu, sauté the chopped onions in a pot with oil, add chili powder, ground cumin and the chopped chili peppers. Also add the cinnamon bark. Puree the peeled tomatoes and the sun-dried tomatoes in a food processor and add them to the pot as well. Pour in water, simmer with the lid closed for about 30 minutes. In the meantime, dice the peppers and tofu. After about half an hour, add the peppers and tofu to the pot along with the beans and corn and continue to simmer the chili con tofu for another half hour, stirring occasionally. Remove the cinnamon bark and serve the chili con tofu.
