For the honey duck breast with curry rice, first prepare the curry rice. Peel the onion, cut into small pieces. Wash the apples, cut them in half, remove the core and cut the flesh into small cubes.
Heat some butter in a saucepan, sauté the onion in it until colorless, add apple pieces, pine nuts and rice, sauté briefly. Add curry and pour in water. (1 cup rice, 2 cups water) Add raisins and season with salt.
Bring to a boil, stir and then cover and steam. Duration: 10 or 20 minutes, depending on package directions.
Season the duck breast with salt and pepper. Preheat oven to 180 °C. Heat some oil in an ovenproof pan.
Place the duck breasts in the pan with the skin side down. Sear briefly and then place in the oven. Duration: approx. 10 minutes.
Then briefly turn over and remove the duck breasts.
For the honey crust, mix the honey with sambal oelek and mustard. Brush the breasts on the skin side with it and put them into the oven again for about 4-5 minutes.
The crust should have a nice color and the breasts should be delicately roasted pink.
Cut the duck into strips. Serve the honey duck breast with curry rice with some gravy.
