Sauce: Heat oil in a frying pan, sauté onion and garlic. Add tomatoes and sage, season, bring to a boil. Reduce temperature, simmer sauce with lid on for about ten minutes. Remove lid, simmer until a slightly thick sauce is formed. Remove frying pan from the plate.
Cover meat patties with ham, roll up, secure with toothpicks.
Heat clarified butter in frying pan, season rolls, fry for approx.
fry for about two minutes. Add Paradeiser sauce, reduce temperature, steam Involtini with closed lid for about ten minutes.
Serve with Mashed potatoes
Depending on the season, use fresh, peeled tomatoes instead of canned tomatoes.
Use pork spaetzli instead of veal spaetzli.
