For the dough add salt to the flour form. Mix eggs and water together, add to flour form and stir well. Add the Schabziger and stand for thirty minutes.
Form the dough in portions on a board and throw it with a spatula into the boiling salted water. As soon as the spaetzli rise, remove with a skimmer and rinse in cold water. Remove, drain and place in a bowl. Spread butter evenly over spaetzli and mix.
Cut winter vegetables into pieces and steam in butter until soft. Towards the end, add the spinach and season to taste with salt and freshly ground pepper.
Roast the spaetzli in butter until golden brown and serve on hot plates with the vegetables.
