For the coffee cream, bring the milk to a boil with the sugar. Mix the cocoa with a little water and add it, as well as the instant coffee.

Mix the cornflour with a little water and add to the boiling milk, stirring constantly. Allow the cream to cool.

Beat the egg whites until stiff, fold in and chill.
