Pasta dishes are always a good idea!

*****- Preparation -***** Knead flour, eggs, salt, oil and two tablespoons of water into a smooth dough. Cover and let rest for about 30 minutes.

For the filling, coarsely chop arugula. Mix cheese and curd until smooth. Fold in half of the arugula. Roll out dough thinly in portions. Cut into 10x10cm rectangles. Put a tablespoon of fuel on each. Moisten edges. Fold dough into triangles. Press edges together with a fork. Form mouthfuls in simmering vegetable soup. When they float to the top, cook for another 10 minutes.

For the sauce, chop chopped garlic. Add remaining arugula, whipping cream and vegetable soup. Blend finely and season with salt and freshly ground pepper.

Drain the Maultaschen. Melt butter in a frying pan. Toss the Maultaschen in it. Serve with the sauce.
