Pork Steak with Calvados Apple Pieces

Instructions:

Season pork steaks with salt and pepper. Fry in hot butter fat on both sides, remove and keep warm. Remove fat, add butter to frying pan and briefly sauté shallots. Deglaze with 2/3 of the Calvados and reduce. Add cream and sauce cubes and simmer slightly. Strain everything through a fine sieve, bind with the cold butter cubes and season strongly with salt and freshly ground pepper. Refine with the remaining Calvados.

Apple pieces:

Peel apples, cut into eighths and core. Lightly caramelize butter and sugar and extinguish with Calvados. Cook the apple pieces until golden brown.

Serve:

Arrange pork steaks on warmed plates, pour sauce over meat and garnish with apple pieces. Serve with pasta.
