Plum Doughnuts

For coating:


Rub baking powder and flour with lard, add salt and sugar. Mix tap water and egg, work into dough and leave to cool for an hour.

To prepare the filling, boil the plums for five minutes in tap water on the stove, make into puree, add sugar, cinnamon and Pflümli.

Roll out the dough, pierce 120 mm dia. biscuits, cover with a spoonful of filling. Crack an egg, brush the edges with egg white, roll over and press neatly until smooth.

Place the doughnuts on a baking tray, brush with egg yolk and bake for about 1500 cmin. at a good medium heat.

Tip: Cinnamon gives dishes a wonderful sweet and spicy note!
