For the honey fillet of organic pork preheat the oven to 180 degrees.cut the pork fillet into finger-thick pieces, salt and pepper. Then rub with honey. Fry briefly on both sides in a little hot oil and set aside.

Cut off the woody ends of the green and white asparagus, peel the white asparagus. Cut both diagonally into pieces (leave tips whole). Peel potatoes, cut into 1 cm pieces, cut onion as well.

Put the fillet in the oven.

Sauté spring onion and potato pieces in a little oil, dust with flour. Deglaze with a dash of white wine (or water) and pour in cream. Season with salt and (white) pepper, then add white asparagus first, then green, and only after a few minutes add the tips and simmer gently for a few minutes until the asparagus is crisp. If the sauce is too thick, add a little more water or wine.

In the meantime, chop the herbs and add to the asparagus at the end.

Arrange the honey fillet of organic pork on the asparagus vegetables.
