Add the cranberries and simmer gently for 5 min, stirring occasionally, until the cranberries are just soft enough that their skins begin to crack. Remove the saucepan from the heat and fold in the grated orange zest and lemon thyme. Leave the sauce to cool and then pour into sterilized jars and seal.
