For the wholemeal quinoa bread, grind the quinoa finely, mix both types of flour in a bowl and make a well in the center. Put the crumbled yeast in the hollow, add 100 ml of lukewarm water and cover with a little flour mixture.

Cover the bowl with a tea towel and let it stand for about 20 minutes. Then add salt and 250 ml of lukewarm water and let the dough knead for at least 5 minutes on medium speed by the kitchen machine.

Add the grains, shape the dough briefly on the work surface into a loaf, then place it in a loaf pan lined with baking paper, brush the top edge with lukewarm water and then sprinkle with grains.

Cover and leave to rise in a warm place for about 45 minutes, preheating the oven to 250 degrees in the meantime. Place the loaf pan in the preheated oven and bake the bread at 250 degrees for 15 minutes.

Then reduce the temperature to 185 degrees and bake for another 20-25 minutes. Let the whole grain quinoa bread cool well!
