For the speculaas cookies, cream butter, sugar, brown sugar and egg in a food processor until fluffy. Chop chocolate and stir into the mixture with cinnamon, salt, vanilla flavoring and speculaas spice. Mix flour with baking powder, sift and add as well.
Preheat the oven to 180 °C. Line a baking tray with baking paper and spread the mixture on it in small heaps using a spoon. Bake the speculaas cookies for 15-20 minutes.
