Quarter the leeks lengthwise and cut them into fine strips, cut the carrots and celery into small pieces. Heat about 1 l of water and let the vegetable soup dissolve in it. Heat the oil in a coated saucepan and fry about 2 tablespoons of each vegetable in it until the first spots turn yellow. Now dust with the flour and continue to sauté until the first spots on the vegetables turn nice and dark. Now pour the clear soup and fill up with the remaining water, add the rest of the vegetables to the saucepan and simmer on low heat for about 5 min. Lastly, add the Frutti di Mare with the defrosting water to the saucepan and simmer gently for another 5 min on low heat. Now simmer for another 5 min without adding heat.
