For the apple jelly, mix the apple juice with the raisins, preserving sugar and citric acid, bring to the boil and continue to boil for 1 minute, bubbling, stirring throughout. Stir in the Calvados.

Fill the boiling hot apple jelly into sterile screw jars and close them tightly.
