For the lemon balm syrup, put lemon balm, sliced lemons and water in a bucket and let stand for 24 hours.

Squeeze lemon balm and lemons well and strain through kitchen roll. Then add citric acid, sugar, and hermetic aid and stir until sugar dissolves.

Then pour into bottles.
