For the currant pudding, bring the currant juice to the boil and stir in the powdered sugar, cornstarch and water until smooth. As soon as the currant juice starts to boil, stir in the cornstarch and powdered sugar mixture.

Bring to a gentle simmer until the mixture thickens slightly Pour the currant pudding into bowls and refrigerate for approx. 1 hour.
