For the wedges, wash, brush and cut the potatoes into quarters. Place on a baking tray lined with baking paper, cover with clarified butter flakes and season with salt, herb salt, mild curry, poultry seasoning and rubbed thyme.
Sprinkle with plenty of water, cover a second baking sheet and steam in the oven at 200 degrees for about 1 hour. Then cover the tray and grill over for about 10 minutes more. Enjoy while still warm.
