For the sauce:


Peel the onions and cut into fine rings.

Quarter the peppers, remove the seeds and wash them. Cut into strips as narrow as possible with a sharp kitchen knife.

Mix the oil with the herb vinegar, add pepper, salt, sugar and the thyme.

Mix the onion rings and the bell pepper strips with the marinade.

Leave to marinate in a cool place for at least 1 hour.
