For the red wine apricots, blend sugar yogurt, cream and cinnamon in a food processor until fluffy. Leave to infuse in the refrigerator for about 2-3 hours.

Wash and dry the apricots and cut them open enough to remove the pit. If possible, do not cut all the way through. Replace the pit with one almond at a time. In a saucepan, bring the wine, grated lemon zest, honey and cinnamon stick to a boil, turn down the heat and let it reduce for about 15 minutes without a lid.

Then add the apricots, cover and simmer gently for another 15 minutes.

Then place the red wine apricots on dessert plates, pour the wine sauce over them and serve together with the cold jpghurt cream sauce.
