First, cut the meat into uniform cutlets, about 5 mm thick, and pound until tender, preferably between strong plastic wrap. Cut any small tendons around the edges and salt lightly.

Coat the cutlets one after the other in flour, briefly beaten egg and breadcrumbs. Press breadcrumbs down very lightly, lift cutlets and shake gently to allow excess breadcrumbs to fall off.

Heat plenty of fat in a frying pan (to about 150 °C) and fry until golden brown, carefully swirling the pan repeatedly (hot fat is washed over the surface of the schnitzel, causing the breading to souffle and form nice waves).

Drain the Wiener Schnitzel on paper towels and serve with lemon slices and parsley.
