For the Schnitzel Frankfurter Art, first cut the chicken breast in half lengthwise, season with salt and pepper, turn in flour and pull through the beaten egg. Then press firmly into the breadcrumbs.

Heat the clarified butter in a frying pan. When the fat is hot, add the butter to the frying pan. Turn down to medium heat. Fry the breaded cutlets in the foaming butter for 2 ½ minutes on each side until golden brown. Adjust the temperature so that the butter foams properly but does not burn.

Remove the Schnitzel Frankfurter Art and drain briefly on kitchen roll before serving.
