Rinse and clean the strawberries, cut them in half and mix them with half of the lemon juice. Cut the melon in half, scrape out the seeds with a tablespoon and cut the fruit into 3 cm thick wedges. Cut the flesh from the skin, leaving a rim. Cut the mozzarella into thin slices.

Mix the remaining juice of one lemon, a good pinch of sugar, pepper and olive oil to make a sauce.

Arrange the melon wedges with the peel, the mozzarella slices and the basil leaves on a large platter. Add the strawberries and Bündner Fleisch. Drizzle the mozzarella slices with lemon olive oil sauce and sprinkle with black pepper.
