Remove the bones from the meat and chop them. Rinse the meat under cold running water, dry, season with salt, pepper and caraway. Peel the onions, garlic and cut into cubes. Rinse carrots and celery, remove peel, chop.

Cover the bottom of a roaster with water. Pour in the meat, add the bones and vegetables. Put the roasting pan in the oven heated to about 200 degrees (hot air about 180 degrees ) and roast the meat for 50 to 60 minutes.

In the meantime, baste the meat a few times with the beer. Remove the meat and keep it warm. For the sauce, pass the bones, vegetables and gravy through a sieve. Gradually add the cold butter in pieces until the sauce is creamy.

Offer as a side dish e.g. cabbage with bacon and parsley potatoes.
