For the apple tart, separate the eggs. Beat egg whites and 3 tablespoons warm water until stiff, stirring in sugar and vanilla sugar.

Stir in egg yolks. Mix flour, cornstarch, baking powder and cocoa. Sift onto the egg mixture and fold in carefully.

Line a springform pan (diameter: 24 cm) with baking paper and pour in the mixture. Bake in a preheated oven at 180 °C for about 25 minutes.

Peel, quarter and slice the apples. Bring to the boil with 75 g sugar, apple juice and lemon peel and steam covered for 4 minutes at low heat.

Mix cornstarch with 3 tbsp. water and add to the apples, bring to the boil again briefly and then let cool.

Cut the sponge twice and spread the apple mixture on the bottom layer, cover with the 2nd layer.

Whip the cream, vanilla sugar and the remaining sugar until stiff. Set aside 125 g whipped cream for decoration.

Spread 1/3 of remaining whipped cream on 2nd cake layer and top with 3rd cake layer. Spread the other 2/3 of the whipped cream all around the cake.

Decorate the apple tart with chocolate shavings and the whipped cream set aside.
