Rinse and clean the strawberries and cut them into small pieces. Stir the sour milk with 2 tablespoons of honey. Whip the cream until stiff and fold into the sour milk. Then fold in half of the strawberries.

Rinse the saddle of venison mold after it has cooled down. Pour in the sour milk and strawberries mixture and place in the freezer for 4 hours. After 30 min, stir the mixture once so that the fruit is evenly distributed in it.

In the meantime, crush the remaining strawberries and sweeten with 1 tablespoon of honey.

Leave the strawberry puree to cool.

Before serving, dip the saddle of venison dish briefly in hot water and turn the set amount out onto a plate. Then cut the sour cream into slices.

Arrange two slices at a time together with the strawberry puree on four plates.

Bring the strawberry sour milk slices to the table garnished with a few mint leaves. Variation: You can also cook this refreshing dessert with raspberries or with a berry fruit mixture.
