Instructions:

A simple but delicious cake recipe:

1. mix eggs with milk, flour and 1 pinch of salt until smooth. Melt 10 g of butter in a frying pan, pour in 14 of the batter and bake over medium heat for 3-4 min until the surface is bubbled.

2. turn pancakes to the other side and bake repeatedly from the other side for 2-3 min until golden brown. Bake 4 pancakes in this way and cool. Squeeze the curd cheese in a dish and mix with vanilla pulp, sugar and lemon zest and juice. Whip the cream until stiff and fold in.

Roast pine nuts in a frying pan without fat until golden brown. Allow currant jelly to melt at low temperature. Spread the pancakes with 1 tbsp currant jelly and 2 tbsp curd cheese each and roll up. Serve with the remaining curd, apple compote and pine nuts.
