For the chocolate cookies, finely chop the chocolate with a knife. Beat the butter in a mixing bowl with a mixer on high speed until smooth.
Gradually add the sugar, vanilla sugar and salt. Stir until a combined mixture is formed. Gradually stir in eggs. Stir in flour briefly on medium speed.
Stir in nut kernels and chopped chocolate as well. Line the baking tray with baking paper and preheat the oven. Top and bottom heat 180 °C.
Scoop out small heaps of the dough, place on the baking tray and flatten slightly. Bake the cookies for 15 – 20 minutes.
