For the Pumpkin Spice Latte, first make the Pumpkin Spice mixture. To do this, mix all the spices well (will be more than needed, see tip).
Next, boil down the syrup. To do this, bring the spice mixture to a boil with vanilla sugar and water, stirring constantly. Allow to boil down to a thick syrup. If you use pumpkin puree, you can also add it here or use it instead of the water.
Make the espresso as usual and pour into large heatproof glasses or mugs. Heat the milk and froth it. Sweeten with the syrup to taste.
Whip the cream and pour on top of the coffee. Sprinkle the Pumpkin Spice Latte with the spice mix or cinnamon.
