Instructions:

For the shish kebabs with sauce and tzatziki, prepare the tzatziki. For this, wash the cucumbers thoroughly and grate with a slicer. Add salt to the cucumber mixture and mix well, let stand for about 5 – 10 minutes.

Squeeze the cucumber juice through a fine sieve or wring it out with a work cloth. Mix in garlic, dill and pepper and let stand. Stir in yogurt and season with lemon juice. Refrigerate the tzatziki.

In the meantime, alternate wooden skewers with diced meat, quartered onions, diced peppers and bacon. Preheat the oven to approx. 160 degrees convection or 170 degrees top and bottom heat.

Heat an ovenproof casserole on the stove top. Add the oil and sear the skewers vigorously on all sides. Remove from the roaster and set aside wrapped in aluminum foil.

For the sauce, sauté tomato paste, onions and diced peppers in the roaster. Deglaze with white wine and add the balsamic vinegar. Let it boil down very well.

Add strained tomatoes and fill up with beef stock. Remove from heat, add spices and jalapeno. Let simmer briefly and remove from heat. Place skewers in the sauce.

Cover and place in preheated oven and let steam for about 20 minutes. Then remove the skewers and keep warm. Blend the sauce in the roaster with a blender or blend the sauce in a stand mixer for 2 minutes and return to the roaster.
