Instructions:

For the chestnut soup, sauté the finely chopped onion in olive oil until translucent. Add the grated ginger and continue to sauté briefly over medium heat.

Add chestnuts and sauté for 2 minutes, stirring several times. Add soup, bring to a boil and simmer gently for about twenty minutes.

Now puree the chestnut soup and season with pepper and salt.

Serve in soup bowls and decorate with fresh finely chopped parsley.
