For the potato pancakes with sausage peel potatoes, garlic and onion and grate finely with a food processor. Mix this mass with the egg and the starch flour, season with salt and pepper.
Cut the sausage into small cubes and add to the potatoes. Heat some of the lard in a pan, put a ladleful of potato mixture in the pan, flatten and fry until crispy on both sides.
Do the same with the rest of the dough. Drain the potato pancakes with sausage on paper towels and serve.
