For the apple pancakes, first prepare the filling. To do this, peel and core the apples and cut them into rough cubes. Heat half a teaspoon of oil in a saucepan and roast the apples with the sugar until the pieces start to soften.

Meanwhile, add the apple juice. When the apples have softened, mash them with a potato masher to a coarse pulp (not too mushy). Remove from heat and season with cinnamon.

For the pancake batter, mix the flour with the milk and gradually beat in the eggs. Mix everything together to form a thick batter. Heat some oil in a pan (spreading it well with a pastry brush).

When the oil is hot, pour some batter into the pan with a ladle, let it run round and fry the pancakes on both sides.

Let the finished pancakes drain a bit on a paper towel, spread 2-3 tablespoons of apple filling on them and roll them up. Dust the apple pancakes with powdered sugar before serving.
