Instructions:

For the pork medallions in cranberry sauce, finely chop herbs and juniper berries and mix with salt. Rub medallions with this mixture on both sides.

Heat oil, add rosemary sprig and sear medallions in it on each side (2-3 minutes each). Remove and wrap in aluminum foil and keep warm.

For the cranberry sauce, peel and dice onions and sauté briefly in the frying fat. Pour in soup, add green pepper and capers and reduce by about half.

If you wish, you can now puree the sauce with a blender. Stir in the cream with the cranberry compote and bring to the boil briefly. Season sauce with hot mustard, salt and pepper.

Place pork medallions in the cranberry sauce and serve with croquettes and salad.
