Instructions:

Remove the skin from the pears, cut them in half, remove the core and cut the fruit into narrow slices. Immediately mix with the juice of one lemon.

Clean the leek ready for cooking and cut into narrow rings.

Bring salted water to a boil and blanch the leeks for thirty seconds. Drain and drain well.

Lightly toast the tree nuts in a dry frying pan without adding any fat. Then crumble coarsely.

For the sauce, stir together the yogurt, sour cream, oil, mustard, salt and pepper.

Add the pears, cheese and leek to the sauce form and mix. Let stand for at least fifteen minutes.

To serve, place a few white chicory leaves on the plates. Fill the pear and cheese leaf salad into the leaves.

Prepare the red chicory (prepare it ready to cook, e.g. peel, remove woody parts and dirt) and cut it into narrow strips.

Mix the vinegar with the salt, pepper, mustard as well as the oil to a creamy sauce. Mix with the red chicory and arrange it on the plates as a garnish. Sprinkle with the roasted tree nuts.

Tip: The higher the fat content in the yogurt, the more aromatic and creamy the result!
